架羊
火(huo)分好后(hou)迅速(su)的把羊(yang)坯架火(huo)上,具体操作(zuo)是(shi)烤羊(yang)师右(you)手(shou)提(ti)手(shou)杆(gan)“Z”字弯处(chu)带羊(yang)坯到(dao)烤炉前,左手(shou)抓(zhua)第(di)四根(gen)横(heng)梁“十”字处(chu),右(you)手(shou)提(ti)高手(shou)杆(gan)羊(yang)颈方向处(chu),左手(shou)提(ti)起使竖梁尾(wei)叉对准传动槽中后(hou),整(zheng)条竖梁落入三处(chu)凹槽中,启动牵引电机使载着羊(yang)坯的固定(ding)架转动起来。
调整火堆
架(jia)好羊(yang)(yang)后(hou),要立即看固定架(jia)上(shang)羊(yang)(yang)坯(pi)(pi)的(de)位置和火(huo)(huo)堆(dui)(dui)聚温中(zhong)心(xin)点(dian)的(de)对应情况,羊(yang)(yang)坯(pi)(pi)颈骨末端肩(jian)胛(jia)中(zhong)心(xin)点(dian)和羊(yang)(yang)尾根处要与火(huo)(huo)堆(dui)(dui)聚温中(zhong)心(xin)点(dian)相对应,最(zui)简单的(de)工具(ju)就(jiu)是(shi),用长柄钳子(zi)对应照一(yi)下就(jiu)能迅速(su)的(de)找(zhao)好位置调整好火(huo)(huo)堆(dui)(dui),因羊(yang)(yang)坯(pi)(pi)的(de)前胸(xiong)部(bu)分(fen)比腿(tui)部(bu)大一(yi) 些(xie),所(suo)以腿(tui)尾部(bu)分(fen)火(huo)(huo)堆(dui)(dui)比胸(xiong)肩(jian)处火(huo)(huo)堆(dui)(dui)要少个3~5块约(yue)05~0.8kg木(mu)炭的(de)份量(liang),调整后(hou)视火(huo)(huo)堆(dui)(dui)火(huo)(huo)焰(yan)正常无明火(huo)(huo)后(hou),立即合上(shang)炉盖(gai)进行“焖烤”。
刷油与修整
羊(yang)坯(pi)焖烤(kao)5分(fen)钟(zhong)左右(you)时(shi),开(kai)盖(gai)观(guan)察羊(yang)坯(pi)表面稍(shao)微见黄,上(shang)色均(jun)匀,水(shui)分(fen)已干(gan),能明显看到(dao)(dao)表面下层油(you)水(shui)在滚动时(shi)停机。烤(kao)羊(yang)师要穿戴整(zheng)(zheng)(zheng)洁(jie),高帽,口罩,卫生手(shou)(shou)套,左手(shou)(shou)拇指(zhi)(zhi)、食指(zhi)(zhi)、中指(zhi)(zhi)扣端住烤(kao)羊(yang)专用复(fu)合(he)油(you)“A”油(you)缸,无(wu)名指(zhi)(zhi)和小拇指(zhi)(zhi)紧(jin)紧(jin)夹住尖刀(dao)的柄刃结合(he)处,刀(dao)刃相外(wai),右(you)手(shou)(shou)调整(zheng)(zheng)(zheng)固定(ding)架方向以最佳位置(zhi)对羊(yang)坯(pi)进行(xing)第一(yi)次(ci)修(xiu)整(zheng)(zheng)(zheng)刷(shua)(shua)油(you):右(you)手(shou)(shou)执尖刀(dao)刮去渗(shen)出油(you)水(shui)物质后(hou)送回左手(shou)(shou)中,取出毛刷(shua)(shua)在油(you)缸口处抿去多余(yu)“A”油(you),刷(shua)(shua)在 羊(yang)坯(pi)整(zheng)(zheng)(zheng)体(ti)里外(wai)两个面上(shang)。刷(shua)(shua)油(you)的作(zuo)用是使(shi)羊(yang)坯(pi)表面受(shou)到(dao)(dao)“A”油(you)的保护(hu),使(shi)羊(yang)坯(pi)内部受(shou)热均(jun)匀,保持水(shui)分(fen)最大(da)限度不溢出,使(shi)肉质脆嫩和表面一(yi)层有(you)酥(su)脆的口感效果。刷(shua)(shua)油(you)修(xiu)整(zheng)(zheng)(zheng)后(hou)立即(ji)合(he)盖(gai)焖烤(kao)。刷(shua)(shua)“A”油(you)与用尖刀(dao)划开(kai)关(guan)节(jie)筋膜,使(shi)羊(yang)坯(pi)自然收缩(suo)呈现(xian)自然形(xing)态(tai)。烤(kao)制时(shi)间为90分(fen)钟(zhong)左右(you),整(zheng)(zheng)(zheng)过程(cheng)刷(shua)(shua)“A油(you)”4次(ci)每次(ci)用量(liang)45g.。 烤(kao)制中修(xiu)整(zheng)(zheng)(zheng)一(yi)般是20分(fen)钟(zhong)进行(xing)一(yi)次(ci),第二次(ci)时(shi)观(guan)察到(dao)(dao)四肢关(guan)节(jie)肌肉因受(shou)热收缩(suo)时(shi) 在 烤(kao)制过程(cheng)中,刷(shua)(shua)油(you)修(xiu)整(zheng)(zheng)(zheng)的同(tong)时(shi)也(ye)要随(sui)时(shi)观(guan)察调整(zheng)(zheng)(zheng)火的对应位置(zhi)与大(da) 小,以确保烤(kao)制出最佳烤(kao)全羊(yang)来。
最后十分钟

卸羊
